Each corner of the truck has two u-bolts, so a total of 4 nuts to hold each spring perch plate. Out of an abundance of caution I would replace them one corner at a time so you can torque down the 4 nuts evenly. Replacing one u-bolt then the other might lead to uneven tension between the two u-bolts or a cockeyed spring perch.
My question is why are you replacing the u-bolts?
