Monica’s in C/S is incredible. 2 locations. I was kicking around the idea of jumping in the 40 and grabbing a couple this morning!

It's been eight years but I still remember Bonfire Burrito when they were still in the dilapidated trailer in the parking lot of that nursery. I haven't found a better breakfast burrito anywhere else in the west and I've been looking.

I j out looked them up since I’ll be driving through the springs this morning, looks like they’ve got 4 locations now! I’ll be checking them out today! Thanks for the recommendation

upon further inspection it was Poncha Springs I believe it was Tony’s Restaurant. We hit them up on the BV/Pitkin ghost town run a couple years back. Not sure if it has changed hands since then or not but remember really loving the breakfast burro. Could also be that we had a really early start and I didn’t make breakfast for us that morning. Will need to try them again, oh no.
